Fine-tuning what data gets collected

I'm very grateful for the latest updates to Umami Analytics. I've got a privacy concern on my mind. Is it possible to set up Umami so that it doesn't collect the visitor´s city, device, browser, etc. Basically, that would let me decide what data I need to collect. This would maybe adhere better to GDPR.

I'd also be interested in reading about your privacy concerns about the new Recordings feature.
