Additional data is passed in as dictionary, however in workflow returned as string? via context.Record.AdditionalData.
Any reason this isn't Dictionay<string, object?>?
There is an method context.Record.SetAdditionalData(), but using it one should be careful as it will override existing:

I think it would be useful to have a method which set/update key/value pair.
Furthermore from within backoffice, IIRC, it is not possible to see these in UI.
