Looks great, @AndyButland 🙌 I have one small suggestion: could we remove the hyphen? We're aiming to reduce hyphen use in the documentation to improve readability and consistency.

Description
Further to conversation in umbraco/Umbraco-CMS#19377, added clarifying detail to documentation about
UniqueMediaScheme. This can be updated just for 16 as the detail about throwing the exception on use of V7 GUIDs is only relevant for that version.Type of suggestion
