chore(): add fexcore 2603

Added the latest fexcore (2603). This is a huge upgrade and fixes a ton of compatibility issues as reported by early-access users of GN and Fexcore.

I've also updated the DefaultVersions so that it uses that one now, so users can more quickly benefit from this change.
