fix(site): redirect /guides to legacy.videojs.org

[decepulis]

Add Netlify redirect rules to send /guides and /guides/* paths to legacy.videojs.org/guides, preserving subpaths via :splat. Uses 308 (permanent redirect) consistent with other legacy URL redirects.
