Why remove the `"` (quotes) around String ?

I feel like this change from v6 is very odd.

I prefer when string were displayed with quotes around them, not only when editing the value.

It make empty string appear bugged, because it displays nothing.

Also, i'd remove the space between the key and the ":" like in JSON/JS
