Upgrade vite to 7.3.2 to fix GHSA-v2wj-q39q-566r and GHSA-p9ff-h696-f583 (server.fs.deny bypass and WebSocket file read vulnerabilities). Also bumps @vitejs/plugin-react to ^5.1.4 and eslint-config-next to 16.2.3.
