docs: use plain YAML format for schema examples, drop backticks on trait names
docs: update wiki for ramses_cc schema-as-SSOT (Phase 4, known_list removal) Fix outdated references to the legacy known_list config format: - Getting-Started-Users.md: replace old known_list YAML example (class:/bound: keys) with the new schema-based approach (_class, _bound, remotes). Explain that devices are added via the passive scan discovery flow, not by editing a known_list. - Device-Simulator.md: clarify that the ramses_cc YAML config block is sim-only (ha-sim test container) and should not be used in production. - System-Architecture.md: add "Schema as sole source of truth (Phase 4)" section explaining that enforce_known_list is always-on, known_list is derived from the schema at runtime, device traits live as _-prefixed keys in the schema, and the v2→v3 migration merges legacy known_list traits into the schema automatically. - Feature-Catalog.md: update configuration order step 1 to mention passive scan discovery and the _bound schema trait instead of the vague "configure ramses_cc with bound REM".
