Changes look great @rrennick!
I was able to install the plugin and the proper version showed in the Installed Plugins list:
I was also able to generate products and orders from the CLI:
wp wc generate orders 5
Generating orders 100% [=======================================================================================================================================] 0:04 / 0:05
Success: 5 orders generated.
wp wc generate products 5
Initializing...
Generating products 100% [=====================================================================================================================================] 0:02 / 0:04
Success: 5 products generated in 2.91 seconds
Also verified the UI worked as expected too, which ALSO surprised me with a fun YouTube video, so kudos there whoever added that:
