test(logging): add end-to-end tests

Description

This PR adds E2E test suite to the plugin. It uses Playwright and @wordpress/e2e-test-utils-playwright. The E2E tests verify that admins can configure logging settings, execute GraphQL queries, and view the resulting logs with all expected data including CSV downloads. They also test data management features like query exclusion, field sanitization for privacy compliance, and automatic log cleanup based on retention policies.
