SPF cant render special characters in file preview

Describe the bug
Special characters like nerdfont icons are not rendered in spf

To Reproduce
Open src/config/icon/icon.go in spf

Can see them via cat

System information (please complete the following information):
MacOS 15, spf v1.2.1

Most probably due to MakePrintable() in string_functions.go
