chore: Removal of unused dependencies and fix UUID

Description

This PR removes dependencies that are not used and also fix generation of UUIDv4 (replaced by #4606)

The use of 'require' means that we will need to unpick to be able to support newer versions of jest, but doing this PR is far more important.
