Help I cant see my paintings !

Did you add the paintings resource folder to your in game resources ? Did you check your json file for errors and issues ? these errors are reflected in your latest.log

I get no errors but my paintings don't show up in the gui

Make sure the surface on which you place your paintings is big enough. 16x16 means 1 block big ! if your texture is 256x and you made the painting 256x, then your painting is 16 blocks big !

Can i make high definition paintings but put them in small squares ?

Yes. define the painting as 16x16, and make sure your image reference is correct. the game will scale your image into the square !
