Refactor symbol models and extend patching for virtual functions

Renamed symbol model classes for clarity and consistency, updating references throughout the codebase. Enhanced patching logic to support virtual tables and virtual functions, including new descriptor sections and string table unification. Updated project versions and improved symbol collection and serialization logic to handle new model types.
