Removed fluent assertions dependency + housekeeping.

  • Removed FluentAssertions dependency, the library used it for some setup / verification stuff and comparing equivalence of arguments. Instead I've replace it with xunit directly, and hidden that dependency so its not visible to consumers of the library.
  • Updated .NET 8 target to latest at the time of writing (8.0.414)
  • Added symbols to the nuget package
