docs(gantry): replace mermaid architecture with inline SVG#478

Replaces the mermaid flowchart in the Gantry guide with an SVG that matches the dark-theme visual style used by the other diagrams under docs/static/img/ (Inter font, dark background, #4d8eff accent, green for the origin fetch path, dimmed dashed line for the containerd fallback).
