[cider-nrepl] Replace deprecated 'stacktrace' op with 'analyze-last-stacktrace'

What has changed?

stacktrace op name has been deprecated for a few years now. analyze-last-stacktrace behaves exactly the same, it's only the old name that got deprecated.
