Make the data manipulation sections of the code more functional

I think after time some of these objects will become overstuffed with various methods. Another design would be to have a generalization of the scalar.py object that would apply a function which is passed in on the data. This would simplify the problem transforming data to writing a function with appropriate inputs and outputs.

Here's progress on a refactor:
develop...ScalarWithTests
the data processing code is now in terms of more testable function instead of objects. In particular, the ssh connection dependency made testing this code impractical.

The Scaler has been replaced by the TransformGrid and the TransformProfile classes. This issue is outdated. and be closed.
