attempt to fix arm builds

This commit also updates the linux build script to *not* use --appimage-extract-and-run, so that it will try to use fusemount, if possible, instead of just resorting straight to the fallback that requires (insecurely) downloading a runtime, which will fail due to our safeguard using iptables
