fix: startup logging, native module ABI rebuild, shutdown cleanup

- Add file-based startup logging to Electron main process (writes to
  ~/Library/Application Support/.../startup.log with os.tmpdir fallback)
- Lazy-load host modules via dynamic import() so logging captures native
  module load failures with a clear error dialog
- Add electron-rebuild step to release workflow to fix v0.1.0 DMG crash
  (native modules were compiled for CI Node.js v20, not Electron's v22)
- Fix ConnectionManager.destroy() to terminate client sockets before
  clearing, preventing shutdown hang and port leak
- Move servicesSetError listener to FakeTower constructor (was leaking
  on each startAdvertising call)
- Skip DIS service on macOS (CoreBluetooth blocks SIG UUIDs)
- Remove diagnostic logging from startAdvertising (confirmed single call)
- Update CHANGELOG, tech spec, and troubleshooting docs
