Juniper
Juniper grows as a tree, and is only found in cold biomes - Cold Hills (10% chance per chunk), Cold Forest (5%), and Snowy Wasteland (5%). It needs both matching biome tags, so it's looking for a specifically cold variant of those biomes, not just any Hills or Forest.
Tree generation can be toggled off via the Config, so if you can't find any, it may be disabled.
There's no way to buy a Juniper Sapling from a Herbalist Villager - you'll need to find and break a naturally generated tree, which has a chance to drop a sapling.
Juniper Saplings grow like vanilla saplings - plant one and wait, or use bonemeal, for it to grow into a tree.
Once grown, the tree's leaves will randomly start bearing berries over time. Right-click a leaf block with berries to harvest a Juniper Berry without breaking the leaves - that leaf will then need time to regrow another one (or you can bonemeal the leaf block directly to force a berry to appear). Breaking Juniper Leaves also has a chance to drop a Sapling, same as vanilla leaves.
Juniper Wort can be crafted in a Vat, 3 Juniper Berries, 1 Sugar, 2 Grapes and 1 Wheat with Water (the Vat needs to be filled to the top) gives Juniper Wort. This can then be fermented in the Vat up to 2 times, then fermented in a Distillery to make gin, or matured in a Barrel.
