refactor(ui): replace hardcoded colors with dynamic theme resources

Replace all hardcoded color values in XAML windows with DynamicResource
references to ensure consistent theming across the application. Add missing
styles for ComboBoxItem, DataGridCell, and DataGridRow to maintain visual
consistency. Update TextBox caret brush to match foreground color. Apply
consistent border, padding, and corner radius to settings windows.

This change improves accessibility by ensuring all UI elements respect the
application's theme system and eliminates color inconsistencies between
different windows and controls.

BREAKING CHANGE: version bumped to 0.7.9
