What does this PR do?
This PR adds a note on Play 2.3 support, adds new env var options DD_ENV, DD_VERSION, DD_SERVICE, DD_TAGS from DataDog/dd-trace-java#1341, reorders the env variables to highlight most valuable, and renames global.tags to dd.tags.
