Use 8080 as the default metrics port and fix docs references

What does this PR do?

As per the latest Karpenter metrics documentation (https://karpenter.sh/docs/reference/metrics/), the Prometheus formatted metrics endpoint is exposed on :8080. Also fixes the Karpenter documentation links.
