Release v2.1.0 on PyPi

Given recent updates to Opik, Pandas, DSPy, GLiNER, etc., this update backs out use of gliner-spacy and replaces it with a local class GLiNER to perform the NER work, and allow for changing labels, threshold, etc., at run-time.

The project is now mostly back in working order, less the Opik dashboard (WIP)
