Provider layer modernization

- Structured YAML config composition (Yams-based ConfigComposer) replaces string-concatenated config generation
- Kimi is now an official OAuth provider (Kimi for Coding) — legacy API-key credentials are automatically quarantined and the app shows "Re-login required"
- Model catalog now tracks the CLIProxyAPI main-branch model registry (no more pinned commit)
