Cleaned install files, switch to UV, new example added

No code changes per se, but cleaned install files, removed redundancies / unnecessary files not needed by pip.

Simplified install procedure for docker building (and updated that to UV as well).

Example code moved to example folder and new example added for api calling. Renamed the files to support clarity of use cases.

Updated Readmes accordingly.
