[Due for payment 2025-10-30] Investigate Fullstory masking issues

We've deployed several improvements to Fullstory these last months:

• [No QA] Support Fullstory in react-native-web and refactors/cleanup #67552
• [No QA] Improve Fullstory mocks #68422
• [No QA] Fullstory improvements - Part 2 #69606
• [No QA] Bump Fullstory libraries #70452

However we are still having some inconsistencies with the masking, here are some examples:

Updates:

• Addressed Fullstory support e-mails.
• Updated our doc with what's supposed to be masked.
• Created the first two PRs to upgrade FS libs since support team reached out to us and said the newest versions fix the crash we had before: [No QA] Upgrade @fullstory/react-native lib #73026 and https://github.com/Expensify/Mobile-Expensify/pull/13748.
• Will now proceed with working on the masking adjustments following the doc rules, will work using the above PRs as base.

• [No QA] Upgrade @fullstory/react-native lib #73026 and https://github.com/Expensify/Mobile-Expensify/pull/13748 were merged! Started looking into the current masking implementation.
