There are a large variety of weapons featured in Battle Arena. To see a full list, use the command !shop list weapons. This will not list all of them, however, as most of the need special blueprints to unlock.
Weapons can be leveled up via Red Orbs after you buy them. This can be done until they reach level 250. After that, special titanite items are required to level them to the max of 500.
There are also some weapons that require ammunition for melee attacks. The techs for these weapons will also use the ammo that the weapon does, so keep that in mind for having the correct amount of ammo. Certain weapons use more than others.
