Publish capacity/throughput/concurrency numbers in operator docs

Re-scoping — the actual numbers already exist: docs/load-test-worker.md (from #4913's load-test harness) has real baseline capacity/throughput figures. What's still genuinely missing: publishing them to the actual operator docs site (loopover.ai/docs), not just an in-repo doc — and framed for operators, not as the harness's own "informational only, not a target" caveat. Narrowing this issue to that publishing gap specifically; #4913's numbers are the input, not new numbers to produce.

The load-testing tooling this depends on shipped via #7184 (closes #4913). A prior attempt at the actual numbers-publishing doc (#7214) was closed unmerged — worth checking why before re-attempting (may have used placeholder/unverified numbers rather than real tool output). Unblocked and ready for a contributor to run #7184's tooling for real and publish the resulting numbers.
