Add Speechmatics as a second STT provider (#18)

v1.2.0 ships dual-provider STT (Speechmatics default + AssemblyAI fallback) behind a small STTClient interface, per-provider encrypted API keys with one-time migration of legacy single-key installs, a transcription-language picker (FR/EN) in Setup, per-provider hourly rates, and a word-level streaming animation with sentence aggregation for the audience display.

Closes #17 (configurable force-endpoint threshold — superseded; the watchdog stays as the AssemblyAI fallback).
