v1.2.0: Modernized package structure (and actions)

With this release we get rid of the old setup.py and are now using the more modern pyproject.toml, leading to all actions having been updated. New versions are now also automatically pushed to PyPI, leading to less manual work (and avoiding future mistakes).

From an end-user perspective, only the change in the package structure has a noticeable impact.
