Do you have a backup, or is /mnt/dietpi_userdata lost entirely? I guess easiest is to remove the symlink and create a directory in place:

sudo rm /mnt/dietpi_userdata
sudo mkdir /mnt/dietpi_userdata

dietpi-drive_manager will now show the location at the rootfs. From there you can move it to a new drive, if needed.
