6.0.100: SwiftPM support for capstone v6

Tracks upstream capstone-engine/next at 8f917b9a (v6.0.0-Alpha6 plus 131
commits), with the fork's SwiftPM additions on top:

- Every arch/**/*.c is wrapped in its CAPSTONE_HAS_<ARCH> guard, so disabling
  an architecture removes its code instead of failing to link. Building only
  X86 and AArch64 takes the object code from 66 MB to 16 MB.
- Every architecture is a package trait, all enabled by default, matching what
  the CMake build does. ARM64 is kept as an alias for AARCH64 so v5 call sites
  keep working.
- bindings/swift/UpdateArchitectureGuards.sh maintains the guards after an
  upstream sync and has a --check mode for CI.

Follows the fork's 5.0.100 versioning: upstream major, then the fork's patch
series.
