Update (AI) docs to include audit findings

Description

On Feb 20, 2026, Trail of Bits published a audit report on Charon which revealed some issues that eventually were fixed by the Obol team in recent releases. Currently, all our docs and AI-related guidelines use Charon v1.7.1 as reference which does not include the fixes related to this audit.

Acceptance criteria

Update all docs so that AI-related tooling is aware of the fixes related to this audit so that they can be considered in all appropriate tasks (ex. PR reviewing).
