fix: separate analytics database, add auth config, and installer fixes

- PG_URL now uses separate analytics database instead of demo northwind
- Added 00-init-analytics-db.sql to create analytics DB and user on startup
- Added northwind-db dependency for analytics-ui in docker-compose
- Added JWT_SECRET, JWT_ACCESS_EXPIRES_IN, JWT_REFRESH_EXPIRES_IN_DAYS
- Added OAuth configuration env vars (Google, GitHub)
- Updated .env.example with OpenRouter API key and Claude model default
- Added production config (config.prod.yaml)
- Updated utils.rs to bundle and write the new init SQL file
