min pin interchange

I'm seeing interchange 0.4.x get pulled in and cause our CI to fail, e.g. https://github.com/OpenFreeEnergy/openfe/actions/runs/23567279950/job/68621761200

We should min pin to interchange 0.5.0 both here and in the feedstock
