Release v0.1.1; CI falls back to ad-hoc when no signing cert

Bump version to 0.1.1. The release workflow now ad-hoc signs (skipping Developer
ID + notarization) whenever CSC_LINK is unset, not just on explicit adhoc dispatch
— so a tag push produces a usable release before signing secrets are configured /
while Apple's notary is unavailable.
