Commit Message: docs: scoping for the slim (client-go-free) daemon build (#156)

Measured plan for the one remaining daemon follow-up (size-only, no functional
impact). Captures the real numbers (64MB stripped, 487 k8s/helm packages in the
build graph), the 8-package coupling surface with per-package daemon-need +
action, the build-tag mechanism (nok8s + interface-ized Agent fields), a 4-phase
plan, and a CI check (0 k8s packages under -tags nok8s). Documents why it's a
~1-2wk interface-extraction effort rather than a quick change.
