Replaces references to Charles in his former sales/CS/onboarding exec capacity across the sales handbook. Looks good - I’ve suggested removing Onboarding in two spots as a) they don’t report to me and b) they don’t offer discounts generally

I rewrote it as "Ben Bradley (TAEs, or as exec backup) or Simon Fisher (TAMs or CSMs)" — happy to adjust if Ben would like a different framing (e.g. if a separate TAE lead is being designated).
