.deb and .rpm install the privileged helper and its polkit policy, so every feature works.

The AppImage is read-only for privileged operations: polkit authorises by absolute
executable path, and an AppImage mounts at a different path on every run. nix reports those
features as unavailable with a reason rather than failing at the point of use. See
packaging/README.md.

Verifying this build

Each package was opened and checked before publication: the helper is present at
/usr/libexec/nix/nix-helper, mode 0755 and not setuid; the polkit policy is installed and
annotates that exact path; the desktop entry validates; and the deb was installed on a clean
runner and asked for its version.
