Fix macOS workflow by upgrading from Qt5 to Qt6

The recent upstream merge introduced Qt6-specific dependencies
in src/qt/CMakeLists.txt. Update the macOS GitHub Actions workflow
to use Homebrew's default Qt (Qt6) instead of qt@5 to fix build failures.

Changes:
- Replace qt@5 with qt in package dependencies
- Remove Qt5_ROOT and Qt5LinguistTools_ROOT CMake variables
- Update UI name from "Qt 5 GUI" to "Qt GUI"
- Update slug from -Qt5 to -Qt
