Cart image: complete rewrite

Previous approach (broken): Plugin on DefaultItem::getItemData() — only affects minicart (customer-data/KO.js), NOT the cart page or checkout which use server-side rendering.

New approach: Plugin on ItemProductResolver::getFinalProduct() — the universal hook Magento uses in ALL contexts to determine which product image to render for configurable cart items. Sets image, small_image, and thumbnail roles on the resolved product.

Works on: cart page, minicart, checkout, Luma & Hyva.
