FetchContent consumers fail to find kalshi/version.hpp (introduced in
v0.1.0). The configure-time generated header lives at ${PROJECT_BINARY_DIR}/include/kalshi/version.hpp but the target_include_directories(kalshi_core PUBLIC ...) was pointing at ${CMAKE_BINARY_DIR}/include — under FetchContent that resolves to the
consumer's top-level build dir (where the header is NOT), not the
kalshi-cpp subproject dir (where it IS). Using PROJECT_BINARY_DIR
pins to the kalshi-cpp project's own build dir under either standalone
or FetchContent layouts.
