fix: email_sign_in now compares email against local stored email

- If local email doesn't match entered email, fetches vault from Neon instead of using wrong local salt/test_payload
- Fixes 'wrong password' when signing in with a different email on same device
- Email is now trimmed and lowercased for consistency
