v.16 BETA | Thorough error handling and logging, Windows 11 testing

This is labeled as a pre-release for now until I can get some reliable testing from windows 11 users and ensure that there are no more problems with converting their photos. If you're a windows 11 user and experience any errors/crashing/any problems at all then please go to issue #11 and add your log.txt file and any screenshots or video clips to help me narrow down on root cause.

ADDITIONALLY if it works for you on windows 11 please post on issue #11 and let me know! I want to make sure everything works before I push this as a full release.

Attempting to resolve issue #11 where the app is closing without converting (presumably unhandled exception).

• expanded exception handling significantly
• added thorough logging, log.txt file will generate within the folder that the .exe is located within
• small code cleanups and removal of unused variables
• removed duplicate code executions
• clear prdrFiles list before adding new files to list (prevents duplicate conversion when working with different folders in a single session)
• handle files with potentially missing or corrupted date headers
• changed target framework from .net9 to .net10
