Release candidate with Sunshine/Wolf backend switching, pairing recovery, input-device ownership recovery, CPU policy packaging and Ghostty bootstrap improvements.

Validation: source CI passes on Linux, Windows and macOS, including isolated Linux package checks and Nix checks. All 13 published package/archive checksums were verified after download; the Linux amd64 binary reports 0.1.0-rc.3. The session image also built and published as ghcr.io/spaceghost/xivstream-session:v0.1.0-rc.3. Game sessions, GPU/display combinations and device behavior still require environment-specific acceptance.
