Adding Matter Support

More on how to Flash the firmware here and the following post.

For Clients:

• If not using Matter use EnvironmenTor-Client.bin.
• If using EnvironmenTor system AND Matter use EnvironmenTor-Client-WithMatter.bin.
• If using Matter Only use EnvironmenTor-Client-MatterOnlyDevice.bin.

For Server (Hub):

• Use the EnvironmenTor-Server_C3.bin for XIAO ESP32-C3 and EnvironmenTor-Server_C6.bin for XIAO ESP32-C6.
• If using Matter Only, no Server (Hub) is needed
