修复微软商店审核发现的触屏设备启动崩溃（10.1.2.10）。

触屏/笔设备启动即崩：在 Surface Go / Surface Laptop 5 等带触屏的设备上，WPF 启动时初始化笔/触控输入栈可能在部分设备状态下直接崩溃（无错误提示）。本应用不使用墨迹与触控笔势，本版起启动时彻底跳过该栈的初始化；触屏点按仍作为普通鼠标输入工作，点按、拖动不受影响
顺带补上崩溃证据链：应用未处理异常（包括后台线程）现在会落盘到 %LOCALAPPDATA%\DeskOrder\logs\crash-*.log（便携模式在 Data\logs\），包含版本、运行形态、异常链与堆栈，出问题不再是无声无息

Fixes the launch crash on touch devices found during Microsoft Store certification (10.1.2.10).

Crash at launch on touch/pen devices: on touch-capable devices such as the Surface Go and Surface Laptop 5, WPF's stylus/touch input stack initialization could fail fatally under certain device states (no error message shown). DeskOrder never uses ink or stylus gestures, so the app now skips that stack's initialization entirely; touch taps still work as plain mouse input, and clicking or dragging is unaffected
Added a crash evidence trail: unhandled exceptions (including background threads) are now written to %LOCALAPPDATA%\DeskOrder\logs\crash-*.log (Data\logs\ in portable mode) with version, run mode, exception chain and stack traces — no more silent deaths
