26.1 Backport 1.1.2 for Minecraft 26.1

Changes:

• Updated Fabric and Fabric API versions
• Moved Easy Data Fix import from jitpack to the new modrinth maven - This fixes the issue of the previously used Easy Data Fix version not being found anymore due to the 26.1 Easy Data Fix fabric and neoforge versions being merged and the old separate versions being removed.

• Removed all backported content.
• Added a DataFixerUpper to allow a seamless upgrade from 1.21.11 with this mod to the official 26.1+ update. (Note: Once all chunks are upgraded this mod and its dependency can be removed)
